Growing Organic Coffee

For us, organic coffee cultivation is not just about not using chemicals.

We grow sustainable coffee using syntropic methods in an “agro forestry”, together with native and fruit trees and other plants in order to further increase biodiversity. We plant our coffee seedlings in lower density to give other plants space to grow. Wood and other organic material remain on the lot.

At no time do we use herbicides, fungicides or chemical fertilisers.

Reforestation with native trees

Unfortunately, almost all the native trees have been cut down in the last 200 years for coffee cultivation or timber extraction. In order to reforest, we plant native trees on the fallow land at intervals of about 12 metres and fruit trees every 6 metres and we enrich other areas. Since 2023, we have planted a total of around 2500 trees.

The finca is powered by solar energy. Hot water is beeing produced by solar heaters. The wastewater is treated in septic tanks.

Characteristics of our Single Estate Coffee

The Typica Variety which is dominant on our finca is one of the oldest and most revered Arabica lineages. It is a tall variety characterized by very low production, susceptibility to the major diseases, and good cup quality.

Our coffee is shade grown. We usually do fermentations between 30 and 70 hours and process the coffee “washed” or “semi-washed”. Dried under sunlight.

This coffee has a low, balanced acidity, good sweetness and a mild body. You might find flavours of roasted almonds, cacao and red fruits.
